  • Private dinner for four at the home of COPIA Trustee Theresa and Tom Wajnert in Calistoga
At the top of the Napa Valley sits historic Calistoga, known for its healing geothermal hot springs, famous wineries and charming historical buildings. In its midst stands Solage Calistoga. Designed by renowned local architect Howard Backen, the resort boasts a “San Francisco loft meets Napa Valley barn” feel.

You and three of your friends will be among the first to visit this latest addition to the prestigious line-up of Auberge Resorts. Having opened in the spring of this year, the resort features a bar and casual restaurant that both open onto large outdoor terraces, fire pits, bocce courts and views of the Palisades Mountains. Stretching across the lawn is a 130-foot pool surrounded by cabanas and lounges for your use.

At the heart of the resort is Solage Spa, a fanciful tribute to Calistoga’s origin as a frontier spa destination. Here you will be tempted to partake in a full-body mud “cocktail” at the Mud Bar. As you rest on a cool marble lounge, your body will be painted with nutrient-rich volcanic mud. Then head to the soaking tubs which are filled with Calistoga’s famed natural geothermal spring waters taken straight from the resort grounds.

Should you choose to venture out, complimentary “cruiser” bikes are provided for you to take a spin through the 25-acre property or into nearby Calistoga to browse through its charming shops and attractions.

After dark, gather around the fire pits when the pool area is magically transformed into a candlelit lounge.

And, don’t forget your canine companions for they too are welcome at Solage Calistoga. Deluxe doggie accommodations include plush dog beds and natural doggie treats.

Then feast at the stunning Tuscan-style villa of Theresa and Tom Wajnert. One of the most admired vineyard estates in Wine Country, this exquisite showpiece home is situated on 14 acres on the west side of Diamond Mountain. Designed by Michael Layne and Erin Martin, this dramatic ridge-sited retreat evokes the spirit of the Valley while harkening back to an older Tuscan village. Enjoy views of the surrounding vineyard, planted with old vine Cabernet Sauvignon as you indulge.

Imagine yourself teeing off onto the same groomed fairways where golf legend Arnold Palmer learned to play the game. Nestled in the rolling hills of western Pennsylvania, the 6,500 yard, par-72 course of the Latrobe Country Club is considered one of the most beautiful and challenging courses in North America, and is home-course to the giant among golf’s greatest – Arnold Palmer: winner of 62 Professional Golf Association (PGA) events, the Presidential Medal of Freedom, the PGA Lifetime Achievement Award, 1960’s Athlete of the Decade and inductee to the World Golf Hall of Fame.

Following a round of golf, you will head to the clubhouse for cocktails with none other than Arnold Palmer. Then retire to your beautifully crafted guesthouse at Latrobe – a privilege usually afforded to Latrobe club members and their guests. LOT 8: The One and Only Château Latour
Presented by COPIA's 2006 Collector of the Year, Greg Gregory
  • One 5-liter bottle of 1982 Chateau Latour
Among legendary first growths, this historic and remarkable vintage has justly earned its reputation among many critics as being the Haut-Médoc's finest wine – earning an unprecedented 100 points from none other than the esteemed Robert Parker. Rare in any format, this 5-liter bottle is a truly extraordinary addition to even the most discerning wine collector’s collection.

Tasting notes: “A truly great vintage of exceptional quality: the wines are highly colored, with an exceptionally complex nose, and a mouth that has everything: fruit, flesh, concentration, elegance, balance and harmony, and a long finish. It’s a very big wine but its softness and richness makes it already accessible.” – Chateau LaTour (June 2000)

If possible, the bottle should remain vertical half a day before opening to settle the sediments at the bottom of the bottle. It is then highly recommended to pour this wine into a decanter for aeration at least 2 hours before service.

Requisite: The winning bidder of this lot is responsible for picking up or arranging shipping of the item in this lot. Storage and shipping expenses will be the sole responsibility of the winning bidder. This lot will be stored at WW Shipping Solutions wine warehouse through October 1, 2007. LOT 10: Your French Connection – Culinary Wine Tour Extraordinaire in Paris and Reims
  • Round trip business class air travel for two to Paris, France on American Airlines
  • Two-night stay at Hotel Le Bristol
  • Lunch for two at Guy Savoy’s La Butte Chaillot in Paris
  • Two-nights stay at L’Assiette Champenoise in Reims
  • Lunch for two at Château Les Crayères
  • Private tour and tasting at Champagne Taittinger Cellars
Nothing says romance more deliciously than a beguiling getaway for two to the City of Lights, starting with a two-night stay at the elegant Hotel Le Bristol. Renowned for its exquisite French garden, Hotel Le Bristol is ideally located on the rue du Faubourg Saint Honoré, famous for its fashion boutiques and art galleries, and only steps away from the Champs-Élysées, Place de la Concorde, and the Louvre and Orsay museums. As a member of the prestigious “Leading Hotels of the World” network, Le Bristol is a five-star hotel where first-class service is the norm rather than the exception.

During your Parisian stay, you will be treated to an extraordinary lunch at Guy Savoy’s extraordinary La Butte Chaillot. As one of France’s most celebrated chefs, Savoy has turned an unpromising site (a former bank) into a fashionable restaurant with a façade entirely of glass and clever contemporary décor creating an ambiance of light, warmth and comfort. You will have a hard time choosing from the ever-changing array of irresistible dishes and spectacular desserts.

Then, head northeast to the historic city of Reims where the kings of France were crowned. The most famous and cherished of these events was the coronation of Charles VII in the company of Joan of Arc. Often considered the capital of Champagne – the province world-famous for its sparkling wine (Champagne) – the city of Reims has 200 kilometers of wine cellars stretching nearly 30 meters deep and containing more than 250 million bottles of Champagne, from the most recent crus to bottles nearly a century old.  Here you will stay at the exclusive L’Assiette Champenoise. Known for its gastronomic restaurant awarded two stars by the Michelin Guide, its outstanding wine cellar and its warm service, L’Assiette Champenoise excels in epicurean pleasures: guests can relax in the indoor heated pool, unwind in the sauna, chat in the bar and get a perfect night’s sleep in the bedrooms that reflect the stylish and opulent image of the hotel.

Next, you will be welcomed for another extraordinary lunch in the elegant turn-of-the 20th century Château Les Crayères. Trained by Alain Ducasse, Chef Didier Elena’s traditional yet modern cuisine combines flavors that conjure up true harmony on the plate. Didier imagines his plates to be fields of tension, a pull between two poles producing an interplay between opposites – luxurious and rustic, raw and cooked, hot and cold, sophisticated and natural –expressed as much in the flavors as in the textures, ingredients and techniques. After your feast, take a walk through the meticulously maintained gardens that surround the estate.

Finally, you will have the opportunity to taste one of the world’s legendary champagnes on a private tour and tasting through the historic cellars of Champagne Taittinger. Created in chalk mines that date back to the 4th century, the Taittinger cellars were expanded in the 14th century by local monks to provide storage for their champagnes. It is in this unique underground location that millions of bottles are aged under the meticulous supervision of experts to create world-renowned wines of unparalleled distinction.

LOT 16: The Grandest Crus of them All: Domaine de la Romanée Conti
  • Dinner and wines for eight guests at the Portola Valley home of Judi and Wilf Jaeger
World-renowned wine collector and COPIA’s 2005 Wine Collector of the Year, Wilf Jaeger, and his wife, Judi, will host an incomparable dinner and winetasting at their home in Portola Valley where they will showcase the extremely rare and notably precious Grand Crus of Burgundy.

The famed French wine-growing region of Burgundy is only about a fourth of the size of Bordeaux, but is home to wines of exceptional character and ageability, making them some of the most revered and sought-after wines in the world. Burgundies are classified on four levels, with Grand Cru being among the world’s finest. Grown and crafted from the best vineyard sites in the Côte d’Or, only 33 vineyards have the privilege of carrying the classification of Grand Cru.

At the very top of this coveted classification is Burgundy’s Domaine de la Romanée Conti. This extraordinary producer has enjoyed worldwide renown since the early 17th century for crafting wines of inimitable style.

Preeminent wine critic Clive Coates has said that “Domaine de la Romanée Conti is the scarcest, most expensive and frequently the best wine in the world… This is the purest, most aristocratic and most intense example of Pinot Noir you could possibly imagine. Not only nectar: a yardstick with which to judge all other Burgundies.”

On the yearly release of Domaine de la Romanée Conti’s new vintage, Wilf and Judi make a habit of organizing a special tasting in which they compare the vineyard-designate wines of Domaine de la Romanée Conti against other Grand Crus of the same or adjacent vineyards.

This year, as the winning bidder, you are invited to join them. And to entice you further, they will uncork wines from the exceptional 1978 vintage.

Selected wines:

Whites
1978 Domaine de la Romanée Conti, Montrachet
1978 Domaine Ramonet, Montrachet

Reds
1978 Domaine de la Romanée Conti Echézeaux
1978 Domaine Dujac Echézeaux

1978 Domaine de la Romanée Conti Grands Echézeaux

With only 1,000 cases produced, this extremely rare double magnum will be an especially coveted addition to any cellar. Tasting notes: "The 2003 IX Proprietary Red WIne, a blend of 64% Cabernet Sauvignon, 31% Merlot, and the rest Cabernet Franc and a dollop of Petit Verdot, demonstrates how fabulous the fruit from the estate vineayrd can be. Beautiful scents of crushed rocks, spring flowers, licorice, charcoal, blackberries, and cassis are stunningly pure and complex. Lot 20: Fund-a-Need: COPIA Edible Garden – Youth Programs

Among COPIA’s most unique and compelling elements is the Edible Garden – whose educational, interactive garden squares, groves, orchards, green house, and outdoor kitchen make up the largest, most dynamic, and most visited exhibitions on the COPIA campus.

While many of the key focal points of our garden and its attendant programs focus on particular and fascinating aspects of viticulture, and wine discovery; the inherent storyline around sustainable agriculture, horticulture, …and ultimately, how and where food comes from, is of enormous and on-going interest to visitors of all ages. In this regard, in spite of cutbacks that have affected COPIA’s ability to provide school age children with programs that address their curiosity and interest (curricular and otherwise), the COPIA staff has cobbled together piece-meal approaches to keeping this outreach minimally intact, even if only to signal the broader community of our earnest intentions.

This year’s fund-in-need is a request for support that will take the symbolic form of purchasing individual bricks* that will form the base of a teaching classroom in the Edible Garden. With the $100,000 in garden-related funds that we hope to raise this evening, we will be able to:
  • Keep in operation the in-demand Garden-Walk-Table-Talk education program – that teaches school-age children key seed-to-table concepts
  • Provide for the annual salary of a garden educator – for one year
  • Support community outreach programs to school-age children
*NOTE: Bricks will be made available for bid – at the Auction -- in multiple quantities . Each brick will be inscribed with each donor’s name
